Slow Cooker Three Bean Taco Chili

This recipe for Crock-Pot Three Bean Taco Chiliwas a super big hit with the family who gobbled it up. It has all the warm hearty goodness that you expect in a chili but the taco flavorings add a little something extra I think.

I served with a side of corn breadbut the kids thought that we needed tortilla chips to go with it. Next time I make this recipe I willdefinitelydo the tortilla chips (and maybe some extra taco topping likes sour cream. But as the recipe stands it is a solid winner and isdefinitelya recipe I am making again and again!

As Katie mentioned you could just leave out the corn or you might try adding in some additional beans. Either way I am sure it will turn out great!

I have never rinsed cooked beef before. What is the purpose?

Good question Rebecca, I was always taught to rinse your ground beef after you cook it with hot tap water. It just removes all the extra fat that cooks off. But I have heard that not everyone does this. It would be OK to just drain off the fat too. But, like I said rinsing it gets more of the fat off than draining. I hate a greasy dish.

Thank you for this amazing recipe! I’ve won 2 chili cook-offs at my office with this recipe and made it a dozen times. It is becoming my Christmas Eve tradition. Making it again today for family visiting from Hawaii on a cold Dec week. Perfect dish to warm everyone’s hearts. I use ground turkey, leave out the corn and add green Chile’s and diced red bell pepper. I love the flavor using the taco seasoning.

Will taco seasoning work for chili? ›

If you're sitting at home staring at your packet of taco seasoning and wondering if it can be used for the chili recipe you're preparing tonight, then save yourself a trip to the grocery store. That taco seasoning will work out just fine. Vice versa is true as well. Go ahead and use chili seasoning on your taco beef.

What's the difference between taco and chili seasoning? ›

Taco seasoning typically contains a blend of spices such as chili powder, cumin, garlic powder, onion powder, paprika, and oregano. On the other hand, chili seasoning often includes similar spices but may also have additional ingredients like cocoa powder, cinnamon, and sometimes sugar.

How do you make chili thicker in a slow cooker? ›

Mix in a scoop of cornstarch, all-purpose flour, or oats.

Rather than adding it directly to the chili (which can create clumps) make a slurry. In a small bowl, mix 1 tablespoon of cornstarch with 1 tablespoon of water, then stir this into the pot of chili. For 1 tablespoon of flour, use 2 tablespoons of water.

Kidney beans are a popular choice because they are large enough to stand up to the other ingredients. Black beans and pinto beans are also good options. Avoid small white beans, which can break down and get lost in the mix.

Heat the skillet with the oil over medium-high heat. Add ground beef, cook and crumble the beef for 3 minutes. Then add the onions and peppers and continue to cook for another 5 minutes. Add the minced garlic, taco, and ranch seasoning and give it 1 minute to cook.

Can I use taco seasoning instead of chili seasoning for chili? ›

If your recipe calls for chili powder, taco seasoning might be a sufficient stand-in for some Mexican-American dishes like ground beef for burritos or nachos. Taco seasoning might not be the best for chili soup or other dishes that don't lean more towards the classic American "taco" flavors.

Cornmeal does an excellent job of absorbing extra liquids so adding a tablespoon of it to the chili will thicken the final dish. Mix 2 parts of cold water and 1 part of cornmeal, make it a slurry, and add this to the pot. Allow it to simmer for about 10 minutes after you add the slurry.

Should chili be thick or soupy? ›

Chili should be thick and hearty enough to be a meal on its own, but sometimes there's just a bit more liquid than you want in the pot. While you can simply keep simmering the chili, that method risks overcooking softer ingredients like the beans, losing all your nice texture to mushy monotony.

The best beans for chili are pinto, kidney, and black beans, like in this easy and tasty recipe. This 3-bean chili freezes great for meals later in the week.
